Ingredients:
- 2 lemons
- 1/2 cup of honey
- 1/2 cup of sugar
Instructions:
1. Wash the lemons thoroughly and pat them dry.
2. Using a sharp knife, thinly slice the lemons into rounds about 1/4 inch thick.
3. In a medium saucepan, combine the honey and sugar. Bring the mixture to a boil over medium heat, stirring constantly, until the sugar is completely dissolved.
4. Reduce the heat to low and add the lemon slices to the saucepan. Let the lemons simmer in the honey-sugar syrup for about 10 minutes, or until they have become translucent.
5. Remove the saucepan from the heat and let the lemon slices cool in the syrup for several minutes.
6. Once the lemon slices have cooled, transfer them to a wire rack or baking sheet to dry completely. The candied lemon slices can be stored in an airtight container at room temperature for up to 2 weeks.
