Ingredients:
- Five-pound corned beef brisket
- Water
- Salt (optional)
- Peppercorns
- Bay leaves
- Cloves
- Mustard
- Brown Sugar
Instructions:
1. Preparing the Beef:
- Rinse the corned beef brisket under cold water to remove excess salt.
- Place the brisket in a large stockpot or Dutch oven.
- Cover the beef with cold water, ensuring the water level is about 2 inches (5 cm) above the meat.
2. Adding the Seasonings:
- If your corned beef is unseasoned, add 2 tablespoons (30 g) of salt to the water.
- Add 10 whole peppercorns, 2 bay leaves, and 6 whole cloves to the pot.
- Bring the water to a gentle simmer over medium-low heat, ensuring it doesn't reach a full boil.
3. Simmering:
- Cover the pot and let the corned beef simmer gently for about 2.5 hours per pound (1 hour for every 450 grams).
- Adjust the heat to maintain the water at a simmer.
- If the water level drops significantly, add more water to ensure the meat remains submerged.
4. Testing for Doneness:
- After the recommended cooking time, check if the corned beef is done by piercing the thickest part with a fork.
- It should be fork tender and feel soft when probed.
5. Glazing (optional):
- At this point, you can enhance the flavor and create a glaze on the corned beef.
- Preheat your oven to 375°F (190°C).
- Combine 1 tablespoon (15 g) of brown sugar and 1 tablespoon (15 ml) of mustard in a small bowl.
- Brush the glaze mixture onto the corned beef.
6. Baking (optional):
- Place the corned beef in the preheated oven for about 15-20 minutes.
- This will help caramelize the glaze and add a bit of color.
- Keep a close eye to avoid over-cooking.
7. Resting:
- Once the corned beef is cooked, remove it from the heat and let it rest for about 10 minutes before slicing.
- This allows the juices to redistribute throughout the meat, ensuring a tender and flavorful experience.
8. Serving:
- Slice the corned beef against the grain and serve with your favorite sides such as boiled potatoes, cabbage, carrots, and horseradish sauce.
Enjoy your delicious five-pound corned beef!
