- Scallops, shucked and cleaned
- Wood chips, such as hickory or apple
- Olive oil
- Salt
- Pepper
1. Prepare your smoker.
Preheat your smoker to 225 degrees Fahrenheit (107 degrees Celsius). If you are using a charcoal smoker, add the wood chips to the coals. If you are using an electric smoker, place the wood chips in the designated wood chip tray.
2. Prepare the scallops.
Rinse the scallops under cold water and pat them dry with paper towels. In a large bowl, combine the scallops, olive oil, salt, and pepper. Toss to coat.
3. Smoke the scallops.
Place the scallops on a wire rack set inside a roasting pan. Place the roasting pan in the smoker and close the lid. Smoke the scallops for 15-20 minutes, or until they are cooked through.
4. Serve the scallops.

-To make sure the scallops are cooked through, insert a meat thermometer into the thickest part of the scallop. The scallops are done when they reach an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius).
