## How to Use a Meco Smoker

Meco smokers are popular for their ease of use and consistent results. They're electric, so there's no need to fuss with charcoal or wood. And they're well-insulated, so they maintain a steady temperature throughout the smoking process.

Step 1: Preparing the Smoker

1. Place the drip pan in the bottom of the smoker.

2. Add water to the water pan. The amount of water you add will depend on the type of meat you're smoking and the desired smoke flavor. For most meats, you'll want to add enough water to cover the bottom of the pan by 1/4 inch.

3. Place the smoking wood chips in the wood chip tray. You can use any type of smoking wood chips, but hickory, oak, and applewood are all popular choices. Fill the tray to about 2/3 full.

4. Preheat the smoker to 225 degrees Fahrenheit. It will take about 30 minutes for the smoker to reach the desired temperature.

Step 2: Preparing the Meat

1. Rinse the meat and pat it dry.

2. Apply a rub of your choice to the meat. There are many different types of smoking rubs available, so choose one that you like and that complements the type of meat you're smoking.

3. Place the meat on the smoking racks. Make sure that the meat is not touching any other pieces of meat or the sides of the smoker.

Step 3: Smoking the Meat

1. Close the smoker door and let the meat smoke until it reaches the desired internal temperature. The cooking time will vary depending on the type of meat and the desired smoke flavor. For most meats, you'll need to smoke it for at least 2 hours.

2. Check the meat regularly to make sure that it's not overcooking. You can do this by inserting a meat thermometer into the thickest part of the meat.

Step 4: Serving the Meat

1. Once the meat has reached the desired internal temperature, remove it from the smoker and let it rest for 10-15 minutes. This will allow the meat to absorb the smoke flavor better.

2. Slice the meat and serve it with your favorite sides.
