How to Make Cherry Italian Ice

### Ingredients

* 2 cups sour cherries, pitted

* 1/2 cup sugar

* 1/4 cup water

* 1/4 teaspoon almond extract

* 1 tablespoon lemon juice

* 2 cups ice cubes

Instructions

1. In a large saucepan, combine the cherries, sugar, and water. Bring to a boil over medium heat, stirring occasionally. Reduce heat to low and simmer for 5 minutes, or until the cherries have softened.

2. Remove the saucepan from the heat and stir in the almond extract and lemon juice. Let the mixture cool completely.

3. Add the cherry mixture and ice cubes to a blender and blend until smooth. Pour the Italian ice into a freezer-safe container and freeze for at least 4 hours, or overnight.

4. To serve, scoop the Italian ice into bowls and enjoy.

Tips

* To make the Italian ice ahead of time, store it in the freezer for up to 2 weeks.

* If the Italian ice is too hard, let it sit at room temperature for a few minutes before serving.

* You can use any type of cherries you like for this recipe. Fresh cherries are best, but frozen cherries will also work.

* If you don't have an almond extract, you can use vanilla extract instead.

* Serve the Italian ice with whipped cream, chopped nuts, or maraschino cherries.
